Healthy Lunch Ideas

Everyone loves lunchtime. It’s a time to refuel your energy, catch up with friends, family, or coworkers. Lunch options and possibilities are endless. However, with so many fast food restaurants and diners offering cheap but unhealthy options, it may be hard to steer away from the foods that do you no justice. I’ve put together a few fun, easy to make, and delicious lunch options that you can feel free to spruce up in your own creative way!

1.) Chicken salad sandwich

(Boiled or baked chicken shredded, mixed with chopped celery, light mayo or yogurt, caramelized onions, garlic, and a dash of salt and pepper. Spread on a slice of whole wheat or rye bread with some lettuce and tomatoes for major protein and fiber.)

2.) BLT salad

(Chopped lettuce, tomatoes, shredded cheddar or mozzarella, chopped turkey bacon, tossed with your choice of vinaigrette or balsamic vinegar.)

3.) Quick flatbread pizza

(Whole wheat flatbread drizzled with olive oil and topped with tomatoes, cheese, lettuce, chicken,  onions and popped in the oven for 10 mins.)
